The Chemistry of Glycerides
This booklet, in the Unilever Advanced Series was first published in 1965. The booklet was designed to show the relevance of chemical ideas met in advanced level courses to the study of fats and oils. The booklet described some of the analytical methods used in Unilever laboratories at the time to investigate glycerides. An updated, and more accessible treatment of the topic is provided in a later Unilever booklet called Fats and Oils.
